Pistachio Loaf Cake made by JoElaine {Balsamo} Quinn Recipe

Ingredients:

1 15 oz box of yellow cake mix

2 3.4 oz boxes of instant pudding mix

4 eggs

1 1/4 cup of extra olive oil 1 1 /2 cups of water

1cup of sour cream

2 Tbsps of sugar

1 1/2 cups of pistachios chopped


For The Glaze

2 cups of powder sugar

2 Tbsps of melted butter

1 tsp of almond extract

1 tsp of vanilla extract

Milk


Process,


1. Preheat the oven to 350 degrees.


2. In a large bowl, mix the dry cake mix, dry pudding mix, eggs, oil, water, and sour cream

together until well combined. Set aside.


3. In a small bowl mix the sugar and cinnamon. Grease 1 loaf pan and sprinkle the sugar

mixture evenly on the bottom and sides of pan.


4. Pour the batter into your pan. Bake 50 to 60 minutes or until a toothpick in the center of

cake comes out clean. Let cool. 


5. Combine powder sugar, melted butter, almond extract, and vanilla. Add milk 1 Tbsp at a 

time, until it's the consistency that you like.


6. Drizzle glaze over loaf and sprinkle with chopped pistachios.

Apple Spice Loaf Cake with Cream Cheese Frosting made by

Ingredients:

1/2 stick of butter, plus extra fot loaf pan

3 granny smith apples, peeled and cored, cut into 1/2 inch dice and tossed with a little

lemon juice

1/2 lemon, juice

1 cup of flour, plus extra for loaf pan

1 tsp of ground cinnamon

1 tsp of baking soda

3 or 4 grates of fresh nutmeg {About 1/2 tsp}

3/4 cup of brown sugar

3/4 cup of sugar

Pinch of salt

1 egg

1 tsp of vanilla extract

1/2 cup of toasted and chopped walnuts

1/2 cup of golden raisins


Crean Cheese Icing

1 8oz package of cream cheese, at room temperature

1 cup of powder sugar

1 tsp of vanilla extract

1/2 lemon, juiced


Process,


1. Preheat oven to 350 degrees.


2. Melt the butter in a large sauté pan over medium heat. Toss in the apples

and stir to coat them with the butter. Add the lemon juice and the apple cider.

cook until the apples have softened and the cider has reduced by half. Transfer

 the mixture to a food processor and pulse into a course paste. Reserve.


3. In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars, and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg, and vanilla. Stir to combine, Toss in the walnuts and raisins.


4. Butter and flour the loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 

to 45 minutes.


5. Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.


6, Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.


Cream Cheese Icing


7. Beat together all the ingredients in a stand mixer or with a hand mixer until light and fluffy.
