Blueberry Buns with Lemon Glaze, 

Homemade Blueberry Buns with Lemon Glaze by JoElaine (Balsamo) Quin

Ingredients 

1 cup of warm milk, 110 degrees

One packet of active dry yeast

2 Tbsps of sugar

3 Tbsps of unsalted butter , room temp.

1 large egg

3 cups of all purpose flour

1 tsp of salt

Filling

1 cup of fresh blueberries

1/ cup of sugar

1 Tbsp of cornstarch

Splash of water

Lemon Glaze

Zest of 1 lemon

3 Tbsps of fresh lemon juice

1 Tbsp of unsalted butter , melted

1 3/4 cups of powdered sugar

Pinch of salt

Process:

1. For buns, in a standard mixer fitted with a paddle attachment , combine the warm milk , yeast , sugar , butter , and egg . Switch attachment to a dough hook and slowly add in the flour and salt on low speed until combined. Increase speed to medium and beat dough until it's smooth , elastic , and slightly sticky , about 3 minutes .

2. Transfer the dough to a lightly sprayed oil medium bowl. Clover wirh plastic wrap and let rise in a warm area for 1 1/2 hours or doubled in size.

3. For the filling, in a small saucepan , combine the blueberries, sugar , and cornstarch. Cook over medium heat , stirring often , as the berries break down and release their liquid. Bring to a boil , stirring constantly, until it thickens and has a syrup consisting. Place in a small bowl and chill for 30 minutes uncovered.

4. Lightly spray a 9x13 inch baking pan with baking spray.

5. Punch down your dough to release the air and transfer to a lightly flour board. To the dough into a 12x18 rectangle , dusting wirh flour as needed to prevent sticking.

6. Using a spatula, spread your blueberry filling over the dough leaving a 1 inch border. Starting the short side , roll up the dough tightly to make a 12 inch long roll. Using a very sharp nice coated with flour , cut the dough into 12 1 inch slices. Place them cut side up in your prepared pan , cover with plastic wrap and let rise in a warm area for 1hour or until doubled in size.

7. Preheat oven to 350 degrees. Bake the buns till browned , about 18 to 20 minutes.

8. For the lemon glaze , in a small bowl whisk together the lemon zest , lemon juice , melted butter , powdered sugar , and salt.

9. Let the buns cool completly and with a spatula spread the lemon glaze on top.
