Apple Strudel Fritter Bread, Banana Walnut Dark Chocolate Chip Loaf , Mediterranean Banana Walnut Raisin Bread , Cannoli Bread Loaf, Apple Fritter Bread with Sour Cream Icing 

Apple Streusel Fritter Bread made by JoElaine (Balsamo) Quinn recipe by Weezer Campbell

Streusel Swirl:

1/3 cup of brown sugar

1 tsp of ground cinnamon

1/2 cup of chopped toasted pecans or walnuts, optional

Dough:

2/3 cup of sugar

1/2 cup of butter, softened

2 eggs

1 1/2 tsps of vanilla extract

1 1/2 cups of flour

1 3/4 tsps of baking powder

1/2 cup of milk or buttermilk

2 apples, peeled and chopped (any kind), mixed with 2 TB granulated sugar + 1 tsp cinnamon or apple pie spices

1/2 cup chocolate chips, optional

Granulated sugar for sprinkling on top right after baking, optional

Cream Glaze

1/2 cup of powdered sugar

1-3 Tbsps of milk or cream (depending on thickness of glaze desired)

Process,

1. Preheat oven to 350 degrees. Use a 9x5-inch loaf pan and grease generously with butter or Crisco. Line the loaf pan with a piece of parchment on the bottom for easy removal .

2. Mix brown sugar and cinnamon together in a bowl. Set aside.

3. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.

4. Beat in eggs, 1 at a time, until blended in; add in vanilla extract.

5. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended.

6. Mix milk into batter until smooth.

7. Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture.

8. Lightly pat apple mixture into batter.

9. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.

10. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.

11. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, about 60 minutes.

To Make Glaze

12. Mix powdered sugar and milk or cream together until well mixed.

13. When toothpick comes out clean, remove from oven and sprinkle with sugar if using, and rest on a rack 15 minutes.

14. Let cool for about 15 minutes before drizzling with glaze.

Banana Walnut Dark Chocolate Chip Loaf by JoElaine(Balsamo)Quinn

Ingredients:

2 cups of flour

1 tsp of baking powder

1 tsp of baking soda

1 tsp of salt

3 ripe bananas, mashed

1 Tbsp of milk

1/2 cup butter, softened

1 cup of sugar

2 eggs

1/2 cup of walnuts , chopped + few for topping

1 cup of dark chocolate chips + few for top

Process,

1. Preheat oven to 325 degrees. Grease a 9x5-inch loaf pan.

2. Mix flour, baking powder, baking soda, and salt in a bowl. Then mix bananas, milk, in another bowl.

3. In a bowl of a standard mixer with a paddle attachment beat butter and sugar until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended.

4. Fold in chocolate chips and walnuts until just combined. Pour batter into prepared loaf pan. Top with dark chocolate chips and walnuts.

5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 65 to 70 minutes. Cool in the pan before removing to cool completely on a wire rack before slicing.

Mediterranean Banana Walnut Raisin Bread by JoElaine (Balsamo) Quinn

Ingredients:

1/3 cup of extra virgin olive oil

1/2 cup pure honey

2 eggs

3 ripe bananas, mashed

2 Tbsps of greek yogurt

1/ 4 cup of milk

1 tsp of baking soda

2 tsp of vanilla extract

1/2 tsp of ground cinnamon

1/2 tsp of ground nutmeg

1 1/3 cups of flour , or wheat flour

1/2 cup of raisins

1/2 cup of roasted chopped walnut

Process,

1. Preheat the oven to 325 degrees .

2. In a bowl of a standard mixer with a whisk attachment add the olive oil and honey and whisk together. Then add the eggs and whisk again to combine.

3. Now add the bananas yogurt, milk, baking soda, vanilla extract, cinnamon, and nutmeg. Whisk again.

4 Using a spatula, stir in the flour; then add the raisins, walnuts and stir the batter again until everything is well combined.

5. Lightly oil a non-stick a 9 x 5 loaf pan . Pour the batter into the loaf pan and shake very gently so it evens out.

6. Bake in the oven for 50 minutes. After 50 minutes test by inserting a toothpick in a few places. If only a couple moist crumbs cling to it, remove it from the oven. If it needs a little more time, give it 5 more minutes or so.

7. Remove from oven and letvthe bread cool for 15 minutes and placevit on a serving board and cool down completely.

Cannoli Bread Loaf made by JoElaine (Balsamo) Quinn recipe by Snappy Gourmet

Ingredients:

2 cups of all-purpose flour

1 1/2 tsps of cinnamon

1 tsp of baking powder

1 tsp of baking soda

1 tsp of salt

1 cup of granulated sugar

1/2 cup of unsalted butter softened

2 large eggs

1 cup of ricotta cheese (not drained)

2 tsps of vanilla extract

2 tsps of fresh orange zest

1 Tbsp of fresh orange juice

1 cup of mini chocolate chips

Powdered sugar

Process,

1. Preheat oven to 325 degrees F. Lightly butter and flour a 9x5-inch loaf pan (if not nonstick).

2. In a large mixing bowl, mix together flour, cinnamon, baking powder, baking soda and salt until well combin Set aside.

3. In another large mixing bowl, cream together the sugar and butter with an electric mixer until light and fluffy. Add eggs one at time, beating after each. Beat in ricotta, vanilla, orange zest and orange juice.

4. Add butter/sugar mixture into dry ingredients and stir until just combined. Stir in chocolate chips.

5. Pour batter into bread pan and lightly spread so it's evenly distributed.

6. Bake bread in middle of oven at 325 degrees F for about 1 hour to 1 hour 15 minutes (but check on it occasionally while baking) or until golden brown around edges and toothpick inserted into middles com. out clean. Cool slightly then remove bread from pan, invert onto rack, and cool.

Apple Fritter Bread with Sour Cream Icing made by JoElaine (Balsamo) Quinn recipe by Better Homes & Garden I

Ingredients:

1 1/4 cups of chopped peeled apples, honeycrisp

1/4 cup of brown sugar

1 tsp of ground cinnamon

1 1/2 cups of flour

2 tsps of baking powder

1/4 tsp of salt

1 cup of granulated sugar

1/3 cup of unsalted butter, softened

2 eggs

1/2 cup of milk

1 tsp of vanilla

Sour Cream Icing

3Tbsps of sour cream

1/2 tsp of vanilla

3/4 cup of powdered sugar

Stir in milk 1 tsp at a time if necessary for drizzle consistency

Process, For Bread

1. Preheat oven to 350 degrees. Grease a 8x4 inch loaf pan. In a medium bowl combine apples, brown sugar, and cinnamon. In another bowl combine flour, baking powder, and salt. Set aside.

2. In a large bowl beat together the sugar and butter until combined Beat in one egg at a time. The beat in the milk and vanilla . Add in the flour mixture, stir till combined.

3. Transfer half the batter to the pan. Add half the apple mixture. Spread remaining batter on top over the apples in the pan. Top with remaining apple mixture. Lightly pat apples into the batter. Use a table knife and swirl apples into the batter.

4. Bake about 1 hour or untila toothpick comes out clean. Cool in the pan or wire rack 10 minutes. Remove from pan and drizzle icing on top.

For Sour Cream Icing 

5. In a bowl combine the sour cream and vanilla the gradually add the powdered sugar till combined. Add milk 1 tsp at a time to reach a drizzle consistency.
